These Chocolate Muffins have a secret ingredient: healthy zucchini squash (aka courgette). “Why”, you ask? Well, adding the hidden grated zucchini in a cloak of chocolate batter is a great way to incorporate more nutrition into these muffins!
The result is more like a cupcake than a muffin. Perfect to enjoy for breakfast or as a snack later in the day.

1 cup all purpose flour
⅔ cup whole wheat white flour
⅓ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
1½ teaspoons ground cinnamon

1¼ cup grated zucchini
¾ cup packed brown sugar (granulated is fine too)
⅓ cup canola oil
2 large eggs
¾ cup lowfat buttermilk
⅓ cup mini chocolate chips
